Chocolate Turtle Cake

Mmm, dessert. Mmm, chocolate. Mmm, caramel. Can you want for more than chocolate and caramel? Methinks no.

This is a gluten free recipe, but not in a gross potato starch/rice starch/xantham gum fashion but in a delicious coconut flour/oat flour/lots of eggs fashion. Like good old fashion baking. That other stuff is for science experiments.

First, let's have a conversation about where you don't waste hard earned money buying oat flour, but instead we'll prove all those naysayers wrong and grind our own!! YES, WE CAN!! Let me tell you, it's empowering.
Ok, ok I'll tell you my secret. Blendtec. Yup, throw your favorite old fashioned oats (I like these< great price when you subscribe!) into your high powered blender and blend for 30 seconds. Should be the consistency of flour. One cup oats makes one cup oat flour. Feel empowered?

Now, onto the goods.

INGREDIENTS
1/2 cup oat flour
1/2 cup coconut flour
1/2 cup unsweetened cocoa powder
1 1/2 cups semisweet chocolate chips (divided in half)
1/2 cup butter (1 stick)
1 cup chopped walnuts
7 eggs
1/2 cup evaporated cane juice
2 tsp vanilla
20 caramel pieces + 2 Tbsp milk
1 tsp baking soda
1 Tbsp Apple Cider Vinegar

              *20 servings

1. Put 3/4 cup chocolate chips and your whole stick of butter in a glass measuring cup and melt in the microwave at 50%, checking at 1 minute increments as to not burn.

2. Preheat oven to 350F. Grease 13x9 baking dish with butter.
3. After your chocolate and butter is completely melted, stir to combine, Add your flours, eggs, cocoa powder, evaporated cane juice and vanilla all to the chocolate and egg mixture. Mix well- don't overmix!
4. Put your baking soda and vinegar in a small dish together and combine. After it is done foaming, stir into your mixture.
5. Pour your cake batter into your greased baking dish. Top with remaining chocolate chips and the chopped walnuts. Put in preheated oven.


6. While your cake is baking, add caramel pieces and milk to double boiler and stir frequently so it does not burn.

7. When your cake is done, remove.  Bake for 20-25 minutes. Should rise like a regular cake. Immediately drizzle with your caramel sauce.

Easy Mug Cookie- and shall I declare healthy??

I know, I know, I said I'd be on here every week- shame on me.
But, I'm here with a mug cookie recipe nonetheless- how could you stay mad at me!?

I don't looveee cookies BUT on a brisk winter eve, I do sometimes jones for one.
Making a whole batch of cookies, ideally, would be a waste because I'd let them go to waste, but in reality I would eat the whole batch in one sitting. So, one mug cookie is better for my health. And, yours too.

This little baby, can't even be bad for you because I made it with coconut oil and blackstrap molasses and almond meal. Which are all healthy, which equals healthy cookie. Let's forget to record the chocolate and butterscotch chips on our food logs, mmkay? Thanks.

INGREDIENTS
1 Tbsp Coconut Oil
1/2 Tbsp Stevia (or 1 1/2 Tbsp Sugar)
Pinch salt
1/4 tsp Blackstrap Molasses
1/4 tsp Vanilla Extract
1 Egg yolk
1/4 cup less 3 Tbsp All Purpose Flour (Unbleached)
1 heaping Tbsp Almond Flour
1 Tbsp semisweet chocolate chips
1 Tbsp butterscotch chips

1. First melt your coconut oil in your mug.
2. Add sugar and vanilla to the melted oil, and stir.
3. Add the egg yolk to the mixture and stir.
4. Add flours to the mixture in your mug, and stir again.
5. Lastly, stir in your chocolate and butterscotch chips. Should resemble cookie dough, maybe slightly drier.
6. Microwave for 45 seconds (adjust for how quickly/slowly your microwave cooks)
7. Top with ice cream/whipped cream and eat it all up!

Take a picture before you devour it like a wild animal - heeding my own advice, next time that is.

I'm BAAAACCCCKKK!!!! Are you ready for this??

A whole month later! I was on a long vaca and it took about a week for me to get my life back in order, so I could post! But, I was thinking about it a lot- so that counts right??
So, I wanted to call this recipe "The BEST damn sweet potatoes you've ever had the convenient fortune of caressing your tastebuds"- but that seemed wordy- so I decided on TBDSPYEHTCFofCYT as an acronymn. You're welcome.

When you have your next summer grill get together with your good buds, make sure you whip this up. People will be all, "THESE ARE THE BEST DAMN SWEET POTATOES I'VE EVER HAD THE CONVENIENT FORTUNE OF CARESSING MY TASTEBUDS!"
And you'll be all, "No, no please fret not over my culinary perfections. TBDSPYEHTCFofCYT is such a simple dish, I couldn't help but bless our festivities with its humble graces."
And for that, you're also welcome.

INGREDIENTS
Pound of sweet potatoes
Large bowl of water
1/2 tsp cumin
1/2 Tbsp cinnamon
1/4 tsp chili powder
1 Tbsp Evaporated cane juice
1/4 cup Butter
Aluminum foil packets (make these from 2 squares of foil)

1. Wash& cut the ends off your potatoes. Cube your potatoes into bite sized pieces. Put the cubes into the large bowl of water as you go along cutting them.
2. When all your potatoes are in the bowl of water and cubed, drain the water out- or pour into a strainer.
3. Add half your potatoes into one foil packet and the remaining in your second packet. 
4. Spice your potatoes with your all your seasonings splitting equally between the two. Split your butter and top the two packets of seasoned potatoes.
5. Close your packets up, and shake gently.
6. Put the packets on your grill (medium) for about 15-25 minutes, depending on how fast your grill cooks.
7. Enjoy TBDSPYEHTCFofCYT!!!

Serious TIP: DO NOT, I REPEAT DO NOT leave your potatoes uncovered or they will be so crispy and weird. In their perfect little foil packets they will remain the perfect texture.

Buying in bulk on Amazon!

Today, I would like to share the benefits of buying in bulk on Amazon to get closer to a "whole" lifestyle. While trying to lead a healthier, or "whole" lifestyle, a lot of people are discouraged by the price tag of "health foods". I believe that it definitely takes some time to really get in the groove of finding what works best for your household budget and finding deals whenever you can. I know how discouraging it can be to see 2/$5 snack cakes all over the grocery store, that you know will provide you with 12 snacks, and have to decide if you'll get your money's worth from spending the same amount on half the amount of "healthy" snacks. But, to really choose your health over a few dollars is the most important step in gaining a healthier lifestyle. Believing that your body, the only body that you will ever have, the body God gifted you with to represent Him on this earth, is worth the time and financial investment- that is the most important part. I do not aim to lecture but that is my belief.

Now, realistically healthy to you and healthy to me are probably two different things. Everyone is somewhere in this journey. To me, eating healthy is trying to buy and make food that is as close to "whole" as possible. I don't believe in buying lowfat butters or orange juice with calcium added, even though a lot of people find these as "healthy choices". I believe whole and from the Earth is healthy. I rather have the extra calories, fat and carbs and natural vitamins of what I consider real food, than less of those things in foods that have been modified. We try our hardest to make it to the market and buy local produce, meats, make our baked goods from scratch and that type of thing.

Amazon is definitely different than buying at a warehouse store, like Costco/BJ's. I have gotten great deals at those stores as well but several things I have found at better price points on Amazon.
To reap the benefits of shopping on Amazon, I believe a Prime membership is the best route. You can look at that fee like you would look at a membership fee at any warehouse store.

With Prime, you do receive free 2 day shipping but the catch is that you have to find products that qualify for Prime. That membership is more expensive than my BJ's yearly membership, but there are tons of free shows and movies to watch also so that definitely makes up the difference in cost. And Prime Music was just launched! I know there are e-Books but I haven't taken advantage of that.

Now to really "save" any money, you do have to be willing to make an investment in a bulk purchase. This is cheaper in the long run, but spending more upfront. I would rather spend $40 for 3 months worth of a product, than going to the store for something and spending $10 every two weeks. I'm not becoming a millionaire off these pinched pennies, but hey $100, $200, $300 it adds up.

Ok, enough of my babble!

Products I use often are what I look for deals on because we have a small apartment and there is not a ton of food storage. I would love to buy more in bulk but wherever shall I place gallons and gallons of heavy whipping cream and half cows??!? The struggle is real.

Oats, dried fruits, honey, molasses, nuts, coconut flour- those are the type of items I have dry storage space for. And use tons of! Especially with my new Brunchin Yummies shop :)

One of the ideal situations for buying in bulk is this example of Bob's Red Mill Oats. At just $0.11/oz that is at least two cents cheaper per ounce than what is available at my local stores. Four bags will probably last me a month or two, $14 investment, free 2 day shipping, and you can choose to subscribe and save for $0.10/oz. So that's down to $13, at the store these four bags would cost me $16. Let's say it it lasts two months, for a year on Amazon it would be $78- versus store costs of $96 plus my time and gas of the trip to the grocery store. That's an $18 savings. If you could do that with 5 items you regularly use, that is at least 1 romantic dinner out with your sweetie, or a manicure and pedicure treat for yourself, or a little shopping spree, or some savings, or a small room paint job upgrade. Imagine all the fun things you could do with $100!
Whewww! Did you absorb that?

Ok, let's do another.

Coconut oil.

This is something that has been really hard for me to find a good price on, and I can't guarantee this is the absolute cheapest. I do feel better about not buying 7 containers to equal these two containers and having all of the waste. Also, the time and gas going to the grocery store is a big deal for me!
Organic, Virgin Coconut oil with no GMO's, free Prime shipping, and subscribe and save eligibility at $0.37/oz. That is the same price I pay at the grocery store, but I seriously buy 16 or 32 oz containers of Coconut oil every two weeks to a month. This is easier for me.

Easy Stovetop Granola

Who wants a fresh batch of granola at breakfast time? YOU!
Who's going to give it to you? ME!

Breakfast is the most important meal of the day, but we don't all make time for it. Make yourself something quick and easy and kiddo friendly. You can definitely make this ahead, and in larger batches, but this fed my granola hunger a few mornings ago.

This is definitely healthy with only one tablespoon of honey and no other sugars, so you won't get a sugar crash after breakfast. Serve yourself up a big bowl of Greek yogurt, fruit and granola (and bacon if you're lucky)!

The recipe I got this idea from is at Being Frugal by Choice.

INGREDIENTS

1/2 cup sunflower seeds, pumpkin seeds, craisins, raisins blend
Juice of half an orange
1 generous tbsp of honey
Little less than 1/4 cup Shredded coconut flakes




Melt your coconut oil in a heavy skillet (I prefer cast iron), over low heat.
 Add your oats and coat in the oil.


Add your honey and let melt over oats. Watch it closely so it doesn't start burning. 
Stir constantly so the honey coats the oats.


Your oats will start browning as you coat them in the honey. 
Squeeze the juice of your orange over the oats as you're stirring them.


Add your seeds, walnuts and dried fruits. Keep stirring because the dried fruit will burn really easily. Keep stirring for about 5 minutes or until browned to your liking.


When the oats are browned, add your shredded coconut. Stir for 2 more minutes. 
Don't burn your coconut!

All done!!

 From start to finish this should take 10 minutes max! Now that's a quick breakfast!

This app I love!

Do you watch Shark Tank??
Well, I don't. But I do love this app that was founded on Shark Tank. I went to a friends' and she had these super cute little books stacked full of great pictures. When I flipped to the back and saw that it was an app, I jumped right on it!

It's called GrooveBook. They are absolutely wonderful! You get great quality photos printed and shipped for a mere $2.99. The app is totally free, you just pay for the book. The photos are great quality and it has really pushed me to take more photos. How many of us won't have pictures to show our kids and grandkids? I know I absolutely love going through old family photos so I think it's a great 2014 spin on that old tradition. The best part is, all the photos can be separated from the book with the perforated edge that is provided. I have taken up to 15 photos out of a book and it still holds together. Sea salt caramel coffee

Best part of waking up, GET ME SOME COFFEE.
I do not play with my coffee. It is a necessary component to my day or I will be a zombie. Serious stuff.
I am, like many, a dedicated Starbucks drinker and fan of many delicious concoctions such as caramel lattes. Oh so good, yet oh so bad. Like serious I don't even want to know how many calories are in a Venti Caramel Latte. It's really a shame. Things that are a task to consume, like turnips, should be high calorie since I have to force myself to eat it. But fantastic beverages and sweets should be low calorie since they are so easy to gulp right down. It just makes sense. Who is in charge of this system? We need to talk.
Anyway, I'm about to save you a ton of money and I think calories. Not sure about the latter.

INGREDIENTS

-baking caramel squares (2 per cup of coffee) [if you are very fortunate you will find caramel baking chips which are a luxury in life but for whatever reason they are super hard to find and no one knows what you are talking about when you ask grocery store employees for them- you will get the blank faced whatchu talkin bout lady stare- ugh]
-strong brewed coffee (one generous tbsp of grinds per cup of water)
-milk
-whipped cream (homemade is best of course)
-evaporated cane juice (whatever sugar you use will do) <<that's a really good price 
-sea salt 

1. Put your coffee and caramel baking squares into a small pot on the stove on low heat. This will caramel flavor your coffee while also sweetening it, YUM. Stir this every few minutes

2. Put 2 tbsp of milk and 1 baking square into the microwave, stir every 15-20 seconds. Microwave on med heat. This is some dangerous stuff, make sure you monitor closely.

3. Add 1 cup of milk per 2 or 3 cups of coffee to your pot. This is open to taste preferences. Add about 1 tsp of sea salt. 

4. Once your caramel is completely melted in your coffee, as in you can no longer feel the squares when you stir the pot, turn it off and transfer it to your mugs.

5. Top with whipped cream and a drizzle of the caramel& milk mixture from the microwave. 

6. Mix 1 tsp of sea salt with 1 tbsp of the evaporated cane juice. Sprinkle liberally over your coffee.  Enjoy this beauty!

Spicy Black Bean and Avocado Dip

Ever been going somewhere/inviting people over... and you need an appetizer super fast? But you also want to look fancy? And healthy? Ahaa! Thus was born, spicy black bean and avocado dip.

This dip is a hit! My boyfriend enjoys it with Black Bean and Quinoa chips from Trader Joe's and all my lady friends enjoy it with fresh peppers. I'm sure you can be more creative with what you choose to dip.

INGREDIENTS

1/2 avocado
1 can black beans
4 tbsp Olive Oil
1 tbsp minced garlic
4 tbsp Crushed Red Pepper (adjust for how spicy you'd like it to be)
2 heaping tbsp tahini

1. Rinse and drain your black beans



2. Add all ingredients to food processor/blender/mortar and pestle, whatever floats your boat. Of course I used my Twister jar.

Oink Oink

Wanna see the best, most easiest, most delicious recipe ever??
It's Kalua Pig. Where has this been all my life!!??

I found it over at Nom Nom Paleo. Seriously 3 freaking ingredients? This can't be real life. Anyone is capable of making this and the only way you could not like it, is if you have no taste buds.

I made the slightest of changes to her recipe.


LET'S BEGIN!

You'll need a 3 pound roast, a crockpot, 5 cloves of garlic, and 2  tbsp sea salt or Himalayan Sea Salt. I cooked mine for 11 hours. I usually hate waking up to the smell of food cooking in the crockpot, but THIS! I woke up hungry!!


1. Make 5 deep punctures in your pork with a steak knife. Literally push the knife all the way into the pork.
2. Insert your 5 garlic cloves, or minced garlic, into the punctures.
3. Rub the sea salt over the whole pork. Really be careful of over salting. The pork will make a lot of juice and you don't want it to be too salty.
4. Place your pork in the crockpot, skin side up, and turn on low for 11 hours.
5. When your pork is done, remove it from the crockpot and shred it with 2 forks. Do not shred in the crockpot!! The juice is super salty and you'll ruin your masterpiece. Taste the pork, if it needs more salt add some of the juice from the crockpot.



My sister made this too and she served hers as BBQ. We served ours with sweet potato fries and grilled pineapple. I can only imagine the possibilities!

"It's my house, and I live here"

This post is in reference to unwanted pests. And the need for them to get out of my *&@*#^$ house!
I do not play with bugs. Point, blank, period-end of story.
Now laugh if you may, but I also don't want to go around killing all the bugs. They too are God's creatures. So, sometimes I feel bad after a squish fest.

And, does anyone else remember "Hey, Little Ant". Now that's how you teach kids how to kick peer pressure in the rear end.

But anyway, I would rather just keep them out of my house than kill them. And, since I have a dog I really want to do it without chemicals. I did read up a little on the benefits of tea tree oil and I know that's safe for dogs because I used it last year to help get rid of fleas that Milo got playing piggyback with a deer. Just let that happen, don't ask questions.

I mixed 10 drops of tea tree oil in water in this little 3 oz bottle, I bought out the dollar bin at Target years ago. I sprayed it around the door and window frames and have been cleaning the counters and any spills with the mixture. Plus, it smells great!




A few of my other favorite uses for Tea Tree Oil include household cleaning, scalp moisture/massage. I found a list of 80 things here that I thought was neat. You can buy tea tree oil here. I paid like $9 for this measly bottle so you are getting a real steal on Amazon.

You may be in Maui, but I'm eating coconuts

If you sensed a tinge of jealousy in the title, you would be correct.
Top Mary Kay sales directors and National Sales directors are currently in Maui on the company trip. And I'm jelly. How could you not be!!?? I follow these fabulous women on instagram, so I'm oozing over their pictures.
But hey, I'm making lemonade out of lemons and we've got Homemade Coconut Cream Pie Larabars!

Larabars are delicious and nutritious. What more could you want in a snack?? The brand name bars were good, but the ones I made are fricking out of this world. Oh my goodness I could probably eat the whole batch.
I wanted to make these because I saw a tutorial for some of the fruit ones over at One Good Thing By Jillee. I like sweet, creamy and rich. So Coconut Cream Pie was calling my name. Another huge factor was price. You would have to pull a second mortgage to afford one of these everyday. At a $1.39 per bar at my local grocery store, that was not doing it for me. I already keep coconut oil, shredded coconut and almonds in my cabinets. So cashews and pitted dates were the "investment". I did break down the price total (including the things that were already owned).

*I literally do not understand how this happened. I measured 2 cups, the bag says 8oz, there is still coconut left in the bag. Let's just say I got lucky with extra in my bag.

Now obviously if you do not own any of these ingredients, this is super pricey. To cut down on costs you could buy just the amount you need. We use a lot of these things so buying them in bulk makes the most sense for us. I will add links to Amazon to try to save you a few dollars.



OK, now past that super long explanation and on to the good stuff >>>>>



INGREDIENTS


This recipe does call for a high powered blender or food processor. I love my BlendTec
don't be a dummy and buy salted cashews that you'll then have to rinse. already made that mistake for you.



1. First add your nuts to the blender jar/food processor jar. Grind these to a very fine meal. You may have to stop a few times and use a rubber spatula to scrape the sides of the jar.
2. Now I added all the rest of the ingredients after this. I suggest you add the ingredients in stages. My blender was overheating and I had to stop and go back a few times. Blend until you have a crumbly mixture, resembling apple pie crumb topping or wet sand - you pick.
3. To the real fun! Lay out plastic wrap and pour out the contents of your blender. Top it with another layer of plastic wrap.






4. Roll your bars to your desired thickness with a rolling pin, or flat with your hands. I did them about 1/4 inch thick so they weren't such a high calorie snack. Then I broke off pieces from the edge that were making the shape very irregular and filled in the space to make it close to rectangular.






5. Move the mixture on the plastic wrap to a cookie sheet and refrigerate for at least an hour.

6. After refrigeration, remove both layers of plastic wrap. You can cut them on the cookie tray now.


7. Cut whatever size bars you'd like.


tell me that doesn't look like Virginia. I dare you.

 8. Then place individual bars inside wrapper of your choosing. I cut squares of Press N Seal and wrapped the bars individually. Put some in your fridge and put the rest in the freezer so you don't eat every single one in the same day. That would be shameful.

Fish and veggies for breakfast. How Irish of you.

I have no idea how accurate/politically correct that is. I know my mom always said that about me though. And, she was a funny lady. And, pretty smart. So, I'm taking it at face value and calling it Irish.

I believe my love of vegetables, versus fruit, at breakfast stemmed from the Avocado Breakfast Salad. I have never been a huge egg fan, so omelets were not a vegetable vehicle for me. Also, rarely will you catch me snacking on vegetables throughout the day, but you will certainly catch me with a handful of berries. So this was an attempt to get more veggies in my diet. If you need more veggies, want more veggies and gotta gotta have it- this is for you.

INGREDIENTS

To make Grain free English muffin, you can follow the recipe over at Beauty and the Foodie, or follow this. Let me save you from the mistake I made AND DO NOT, I REPEAT DO NOT, use Almond Flour. Blech, just blech...

1/2 tbsp coconut oil 
1 egg beaten
1 tbsp milk (I have used skim milk and homemade Almond Coconut Milk-preferred the skim)
1 tbsp coconut flour 
1/4 tsp Honey
Pinch Sea Salt
1/8 tsp baking soda with 1/4 tsp Apple Cider Vinegar in a small bowl (this will help the rise)

1. Melt the coconut oil in your dish, in the microwave. I used a large cylindrical mug, like this one)
2. Place the baking soda and apple cider vinegar in their little bowl. It'll fizz.
3. Add all your ingredients to the mug, and whisk until well mixed and smooth
4. Add the baking soda and vinegar mixture. Continue to mix until smooth
5. Now the best part!! Cook it for 1 min and 30 seconds in the microwave, yes the microwave!
6. Take your muffin out of your dish and slice it in half, bun style.
7. Lightly brown the muffin top and bottom, on both sides, in an oiled skillet.


Yay your English muffin is done!!!

Now poach an egg, slice a tomato, an avocado, some smoked salmon, top it with some capers and fresh cracked pepper and enjoy the best breakfast you've ever had.

Grain Free Cookies

Um, YUM. That is the end of the story.



But, seriously, these were so delish, they were consumed in just a few days. So good.

So why grain free you ask? Well, super long story short, I had not been feeling well for a while. Lethargic, upset stomach, everything was making me nauseous and I was literally STARVING all day every single day. Something had to change. I've known for years that I have PCOS, but I have not done anything about it. So I started doing some research and am making what I hope are the necessary changes to my diet. And I can say I feel so much better.

So while I will not let my taste buds suffer at the hand of PCOS, I am dedicated to changing my diet. And of course cookies were the first PCOS friendly food I made.
Here you go!!

This recipe is not my own, I'm merely sharing it. I found it here and I didn't change anything except the amount of vanilla.

Since I don't know much about grain free cooking, a lot of recipes will just be ones I'm sharing.

INGREDIENTS

1 cup super chunky peanut butter (I really like Crazy Richard's)
1 cup brown sugar (I used dark)
1 egg
1 tsp baking soda
1 tsp vanilla extract
1 cup semisweet chocolate chips

1. Preheat oven to 350F

2. Mix all ingredients together, minus chocolate chips.

use these awesome recycled bowls my sweet aunt got me for Christmas

3. Add in chocolate chips.


3. Form 1 tbsp balls of the dough, with your hands.

4. Place on parchment paper lined cookie sheet.


5. Bake cookies until they puff, about 12 minutes


6. Cool and transfer to cooling rack.


made 20 scrumptious cookies
